Recipes round to the nearest setting your oven offers, so the “usual oven setting” is what most cooks actually use.

The formulas

Fahrenheit to Celsius: °C = (°F − 32) x 5/9

Example: 400°F. 400 − 32 = 368. 368 x 5/9 = 204.4°C.

Celsius to Fahrenheit: °F = (°C x 9/5) + 32

Example: 180°C. 180 x 9/5 = 324. 324 + 32 = 356°F, which ovens set at 350°F.

Quick mental estimate: subtract 30 from the Fahrenheit temperature and halve it. For 350°F, that gives 160°C. It is rough and runs low at high temperatures, so use the chart for baking.

Fan (convection) ovens

Fan ovens circulate hot air, so food cooks faster. The usual advice is to reduce the temperature by about 20°C (25°F) compared with a recipe written for a conventional oven, or to shorten the cooking time. Check your oven’s manual, because some fan ovens adjust automatically.

Why oven temperatures can be wrong

Oven dials are often several degrees off. An inexpensive oven thermometer hung from a rack shows the real temperature. If your dial says 350°F but the thermometer reads 325°F, your food will bake more slowly than the recipe expects.
